Quite an old Russian recipe of grits casserole with farmer cheese (tvorog), eggs, butter and sour cream. Can be prepared with any grits, but more often with millet or buckwheat. It may be sweet or sour. Slice of chilled buckwheat krupenik served with Russian Sauerkraut Soup – Kislie Shchi, and millet krupenik is good for breakfast with a cup of milk. And this is great way to use leftover kasha!

This is a quick and hearty breakfast, easy and lazy version of vareniki s tvorogom. In Russia it is considered that the farmer cheese (tvorog) is very good for kid’s health, but children do not like it by itself and only eat it in these dumplings. It could be found in the menu of most kindergartens. The best dumplings in the world are made by my mom. I made my version, it can be described like large ricotta gnocchi.

This recipe adapted from ГОСТ (set of technical standards in USSR), so this is omelet from my childhood. Very common breakfast in Soviet Russia eateries. It is prepared from an equal parts of eggs and milk, baked in the oven or cooked in the skillet with butter or margarine. The structure of the omelet is stable but creamy.

There are many recipes for syrniki: some like a pure cheese flavor, others prefer pancakes-style, some like it savory, some – sweet. Usually recipe includes cottage/farmer cheese (tvorog), preferably smooth (with small curds) and eggs, using semolina or flour to thicken dough.
