It was a long time, but I’m back to business.
Late summer is great time for pick-your-own fun. I made this butter with peaches from Hillview Farms. Donut yellow peaches were awesome and we ate them fresh and raw, but wanted more. Peach Butter is easy to make – just add everything to slow cooker and forget about it for a while. Recipe adapted from
6 medium peaches, pitted
1/3 – 1/2 cup honey
1 tsp. cinnamon
1-2 tbsp. lemon juice (optional)
Peel on not to peel peaches skin? It’s up to you. This time I used hard and unpeeled fruits.
Cut peaches in quarters and place them in large bowl, add honey and cinnamon and stir to combine. Transfer peaches to a slow cooker and cook on LOW about 4 hours. If peaches are very juicy, leave small space between pot and lid (use wood spoon).
Puree peaches, taste, add lemon juice or more sugar, if needed. If butter still very liquid, cook on HIGH without lid (but covered with splatter screen) until thickened consistency.
Store in a container and refrigerate until ready to use.
