Baked Oatmeal with Milk, Honey and Blueberries

Great way for breakfast oatmeal – baked! I have done them before in individual portions with caramel top, but today I made single large bar. Recipe adapted from Cooking Classy.

Yield: 4 servings

1 large egg
1/4 cup brown sugar
1/2 tsp. baking powder
1/2 tsp. cinnamon
1 tsp. vanilla extract
pinch of salt
1/2 cups milk
2 tbsp. butter spread, melted
1 1/2 cups rolled oats

4 tbsp. blueberries
4 tsp. honey
1 cup of milk, whipped

Preheat oven to 350 degrees.

In a large mixing bowl whisk together egg, brown sugar, cinnamon, vanilla and salt. Stir in milk and melted butter then mix in oats and baking powder. Pour into sprayed loaf pan and spread evenly.

Bake in preheated oven 25 minutes until set and edges begin to brown.

Cut into 4 parts and serve with warm milk, honey and blueberries.

1 serving (without garnish) is about 222 calories
