Baked Salmon with Corn Salsa and Black Lentils

I fall in love withpicture in original recipe in Brunch Time Baker blog. Also I search recipes for black lentils – it’s looks like black caviar, so needs something special. This one works great.

Baked Salmon with Corn Salsa and Black Lentils

2 salmon fillets
1 cup uncooked black lentils
1/2 cup canned corn
1/4 red bell pepper, chopped
1 garlic clove, minced
2-3 tbsp. cilantro, chopped
1 tbsp. lime juice

Wash and rinse lentils. Transfer it into saucepan and add 2 cups of water. Bring the water to boil, reduce heat to low. Cook uncovered for 20-30 minutes until soft. Stir in salt to taste.

Preheat oven for 400F. Put the salmon fillets skin side down on the prepared pan, sprinkle with salt and pepper (or use favorite glaze).  Bake 12 minutes or until fish flakes.

Combine garlic, red pepper, corn and cilantro in small bowl. Squeeze in the juice of the lime. Add salt and pepper to taste.

Place the lentils in the center of the plate. Top the lentils with the cooked salmon. Spoon salsa over the top of the fish.
