Very recognizable smell and taste of classic banana and peanut butter combination in one slice of bread. Just toast it and spread some jam or honey-butter on top. Or bacon. Everything is better with bacon. Recipe adapted from Take a Megabite.
Yield: 12 slices
1 cup warm tap water
1 1/2 tsp. active dry yeast
1 tbsp. brown sugar
1 1/2 cup whole wheat flour
1 cup bread flour (I used 2/3 cup AP flour and 1/3 cup semolina flour)
1/4 cup creamy peanut butter (I used whipped from Jif)
2 medium banana, mashed
1 tsp. salt
Whisk the water, yeast, and sugar together. Set aside for 10 minutes, or until foamy.
Add flours, peanut butter, bananas and salt and knead with the dough hook (or wooden spoon) until smooth and elastic. Let rise in double, covered, about 1 hour.
Transfer to a greased bread pan and allow to rise for hour more.
Meanwhile, preheat oven to 325F. Bake bread for 35-45 minutes or until sounds hollow when tapped and is dark on top. Remove from pan and cool completely.
