Hot Milk Sponge Cake Loaf

Easy sponge cake recipe, becomes better next day. Great with salted butter, or grilled with fruit salsa, or for fancy Petit Fours. Adapted from

Hot Milk Sponge Cake Loaf

1 cup all-purpose flour + 1 tbsp. corn starch
1 tsp. baking powder
3 large eggs
1/2 cup granulated sugar
2 tsp. lemon juice
1 1/2 tsp. vanilla extract
6 tbsp. milk, heated

Sift together the flour and baking powder; set aside.

Beat eggs until very thick and light, about 3 to 5 minutes. Gradually beat in sugar and lemon juice.

Fold in sifted dry ingredients until blended.

Combine milk and vanilla extract and heat until hot. Add the hot milk mixture to the batter and beat on low until smooth and well blended.

Pour into a greased and lightly floured 9x5x3-inch loaf pan. Bake at 350° for 30 to 35 minutes, until a toothpick inserted in center comes clean.

Whole loaf is about 1010 calories
