Navel Orange Salad With Ginger Dressing and Goat Cheese

One from evenĀ more navel orange salad. Ginger dressing goes very well with oranges and goat cheese crumbs add some creamy taste. Recipe adapted from Mary Duke Cooks.

2 large navel oranges
1 tbsp. rice vinegar
1 tsp. canola oil
1 tbsp. chives, chopped (I used green onion)
pinch of salt
pinch of sugar
1 tsp. ginger, grated
1 tbsp. crumbled goat cheese

Peel navel oranges and cut into thin slices. For dressing: mix vinegar, oil, salt, sugar, chives and ginger. Drizzle dressing evenly over orange slices. Sprinkle crumbled goat cheese.
