My husband loves tiramisu and meringues, so I made both for his birthday. Chocolate lady fingers, chocolate filling, chocolate meringues and cocoa top. Meringues almost melted, but still a little crunchy. Mocha and heaven taste 🙂
1 cup chocolate pudding (homemade or store-bought)
1/3 cup mascarpone cheese
2 tbsp. sugar
20 mini chocolate ladyfinger cookies
18-20 mini chocolate meringues
1-2 tbsp. unsweetened cocoa
1/2 cup strong fresh-brewed coffee + 1-2 tbsp. coffee liquor
Whip together mascarpone and sugar, add pudding and whip more, until fluffy.
Line bottom of bread pan with 10 ladyfingers, overlapping and crowding to fit. Sprinkle with coffee. Spread third of filling over ladyfingers. Add meringues layer, third of filling, repeat with 10 ladyfingers, coffee, and remaining filling. Sift cocoa on top. Let stay, uncovered, couple hours or overnight in fridge.
