Chicken and Gnocchi Creamy Soup

This is replica of famous Olive Garden Chicken Gnocchi soup, a little lighter but still good. Adapted from Copykat. Very good for snowy days.

Chicken and Gnocchi Creamy Soup


Yield: 2 servings

1/2 tsp. butter
1/4 cup onion, chopped
1/2 celery stick, diced
1/3 cup carrots, shredded
2 garlic cloves, minced
1 tbsp. all-purpose flour
3 cups chicken broth
pinch of dried thyme
pinch of dried parsley flakes
1 cup 2% milk
1 handful baby spinach leaves
1/2 cup diced cooked chicken breast
1 cup frozen gnocchi (I used Gina Italian Village Potato Gnocchi)

Melt the butter in a large saucepan over medium heat. Add the onion, celery, carrot and garlic and cook, stirring occasionally, until the onion becomes translucent. Add flour, thyme, pinch of salt, parsley and cook for about 1 minute. Whisk in the chicken broth. Stir chicken, and gnocchi. Add milk, bring to boil. Add spinach and remove from heat. Let stay about minute until spinach is wilted. Serve hot.
