One more recipe for stuffed peppers. This vegetable created for stuffing for sure! Sloppy Joe, ground beef in tomato sauce, originally is a sandwich, but it work great for peppers too. Recipe adapted from Host The Toast.
2 sweet peppers (orange or yellow)
1 lb. lean ground beef
1 cup tomato sauce
1/3 cup sweet onion, chopped
1 tbsp. Worcestershire sauce
1 tsp. brown sugar
salt and pepper
4 slices Colby jack cheese
Cut the pepper in half and cut out seeds and membrane.
Preheat the oven to 350 degrees F.
Meanwhile heat heavy bottomed skillet or Dutch oven over medium-high heat, spray with cooking spray, add onion and sauté until soften. Add ground beef and cook, breaking it up with a wood spoon or potato masher, until no longer pink.
Add tomato sauce, sugar, Worcestershire sauce, salt and pepper and cook for about 2-3 minutes.
Spray a large, oven-safe dish with cooking spray and place peppers, cut side up. Divide beef in sauce among pepper halves. Bake for about 20-25 minutes.
Top each pepper half with a slice of cheese and bake until the cheese has completely melted.
