Fall Sundays we use for agro tourism – picking up fruits and veggies from local farms. Now we can try lots of different sorts of apples. This is one of great uses for sweet ones.
Yield: 14 fritters
1 cup tepid water or milk
1 tbsp. sugar
pinch of salt
1 cup all-purpose flour
1/2 tsp. dry yeast
1/2 apple, cored, peeled and chopped
Dissolve yeast in warm water, add egg, sugar, salt, flour and knead the dough. Cover and place in warm place until bobbly (about one hour).
Carefully mix with apples.
Spray a griddle or frying pan with cooking spray and heat over medium high heat. Do not stir batter.Scoop the batter onto the griddle, using approximately 1 1/2 tbsp. for each pancake. Cook on both sides and serve hot with powdered sugar or cider syrup.
