Cold Cured Mackerel

This oil-rich fish great cooked or cured. Very easy recipe – just 4 ingredients. It’s mackerel version of gravlax, so it’s great in sandwiches or canapés.


1 whole mackerel fish or two fillet (how to fillet a mackerel)
2 tbsp. kosher salt
1 tsp. sugar
1/2 – 1 tsp. freshly ground black pepper

In small bowl, combine salt, sugar and black pepper. Rub mixture all over the mackerel. Transfer to dish and cover with the remaining mixture. Cover with parchment paper and refrigerate for 1-2 days.

Discard liquids. Transfer the mackerel to a cutting board and slice in pieces.
