I want homemade sausages for my Christmas dinner and I want to make it by myself. So I saw couple video lessons and bought casing and sausage stuffer kit attachment and all ingredients for sausages. It was so much fun! Couple times I want to kill someone or discard anything in garbage, but with a little help of my husband I made it. Big sausage ring (mostly spiral), like many Ukrainian kinds of sausages. Inspired by Big Oven recipe of Jul Korv (Swedish Christmas sausage) but with beef and chicken.
Yield: about 8 big sausages
1 lb. ground beef
1 1/2 lb. ground chicken thighs without skin
1 medium potato
1/2 medium onion
2 tbsp. salt
3/4 tsp. pepper
1/2 tsp. nutmeg
1/4 tsp. allspice
1/2 cup ice cold water (or more)
2 bay leaves for the broth
Wash casings well by running cold water over and through them. Let them soak in the cold water. Mix beef, chicken, potatoes, onion, salt, pepper, nutmeg, powdered allspice, and the water. Mix well.
Take one end of the casings from the bowl of water and thread it over the mouth of the plastic stuffing tube. Stuffs the meat into casing, avoid air pockets, leaving an extra 1″ empty casing at each end, tie them off (or not). Refrigerate the sausages overnight so that the flavors blend. Cook sausages in boiling salted water with 2 bay leaves. Simmer for an hour and serve. I also brown my sausages on the grill.
