Ukrainian Meat Dumplings – Gyluny or Vareniki s Myasom

This is vareniki with cooked (boiled) beef and lot of sautéed onion  for filling and serving. Hearty and tasty, can be frozen too.

Yield: 4 servings (5 dumplings in each)

For dough:

1 1/3 cup all-purpose flour
1 tbsp. vegetable oil
1/3 cup boiling water + more if needed to make dense dough

For dough: add boiled water into oil. Pour this mixture into the flour and quickly knead the dough. Cover with plastic wrap and leave it to rest for 30 min.

For Filling:

7 oz. cooked beef meat
1/2 cup onion, chopped

Sauté onion in sprayed pan until gold and soft. Chop beef with sharp knife or use blender. Mix with onion, add salt and pepper to taste.

Dust the surface with 1-2 tbsp. flour or grease with a little oil spray. Roll the dough into a long log and cut it into small pieces (about 0.4 oz. each). Roll each piece into a 3-inch circle. Fill each circle of dough with about 1/3 tsp. of the cheese. Fold circles with filling in half and pinch edges to seal.

Place vareniki into a large amount of boiled salted water and cook until they float to the surface and water start to boil again – about 4-5 minutes. Carefully stir vareniki with spoon to prevent them from sticking together and to the bottom. Serve hot.
