Baked Apples Stuffed With Farmer Cheese and Prunes

I love apples – fresh and crispy, or baked with some sweet or savory addition. My first bake at all was Russian Sharlotka – up-side down apple cake. Russians has point about good-for-you tvorog (farmer cheese) – it’s our superfood, so this is one more recipe for breakfast with it. And apples, of course.

Baked Apples Stuffed With Farmer Cheese and Prunes

Yield: 2 servings

2 apples
1/4 cup Russian tvorog, farmer cheese (unsalted) or ricotta
1 egg yolk or 2 tbsp. egg substitute
1 tbsp. sugar
3 prunes, pitted, chopped
1/4 tsp. vanilla extract

Preheat oven in 350F.

Mix farmer cheese or ricotta with sugar, egg yolk, vanilla extract and prunes.

Cut the apples in half through their equators. Using a melon baller or knife, cut away core and seeds from each half. Add cheese mixture into each half, place into skillet and bake about 30 minutes, until apples became soft. Serve warm.

1 serving is about 105 calories
