My favorite bake – all things with small curd cheese, like Russian tvorog, Italian ricotta or American farmer cheese. Fritters, muffins, cookies, pancakes and waffles – you named it. Ironically, there is no cheesecakes in my list. Maybe I didn’t eat Right One, I don’t know.
But I know for sure – I love these cookies from my childhood oh-so-very-much. It’s very simple dough with sugar sprinkles inside and outside. In original recipe tvorog and margarin as in equal parts, but I made my cookies with less fat.
Cookie’s’ shapes are triangles and cut from fork makes it looks like goose foot or little shells, some call it roses.
Yield: 32 cookies
1 3/4 cup farmer cheese (fat free is just ok) or ricotta
1/2 cup or 1 stick butter or margarine, melted
1 – 1 1/4 cup all-purpose flour + more for dusting
1 tsp. baking powder
1/4 tsp. baking soda
pinch of salt
1/4 cup sugar (add some vanilla sugar)
Mix together farmer cheese or ricotta, pinch of salt and melted butter, add flour, mixed with baking powder and soda. Add more flour if needed to make a soft, but not sticky dough. Form the dough into a ball, cover and refrigerate for at least an hour.
Preheat oven in 375F.
Cut dough in half. Dust table with some flour and roll one half dough in 1/4 in. thin, cut it in about 3 in. circles. Put the sugar into plate and press one side of the circle of dough into the sugar, fold it in half to form a half moon shape. Press one side into the sugar again, fold it in half (sugar inside) and press one of the sides in the sugar again.
Repeat with all dough. Place the cookies, sugar side up, on the baking sheet. Bake for 20 – 25 minutes.
