We love our pancakes, usually I made plain recipe and serve it with different additions, but sometimes I made pancakes with additions, like flaxseeds and walnuts, or ricotta and scallions, or yogurt and bananas. Don’t forget about rice flour gluten free pancakes. Today I made my pancakes with Raisin Bran cereals. It’s delicious way to eat cereals for breakfast. Raisins in pancakes? Why not?
In Russia we often serve sour cream with our olad’i, it’s very creamy and tasty addition for this pancakes too.
For easy way to make waffles and pancakes I made homemade pancake mix, recipe following, nothing special, but helpful.
Yield: 10 medium pancakes
1 cup Raisin Bran Cereal
1 cup homemade pancake mix*
1 1/3 cup milk
1 large egg
Whisk pancake mix and cereals in medium bowl to blend, add milk and eggs whisk just until incorporated.
Spray skillet lightly with cooking spray and heat over low-medium heat. Spoon batter onto skillet and cook until bubbles begin to form. Flip, and continue cooking until golden brown. Serve immediately.
1 pancake is about 84 calories
*Homemade pancakes mix:
Yield: 5 1/2 cups
5 cups all-purpose flour
1/2 cup sugar
2 tsp. baking soda
3 tbsp. baking powder
Mix all ingredient together. For plain pancakes use 1 cup of mix, 1 large egg and 1 cup of milk.
1 cup of mix is about 430 calories
