Very good addition for morning food – pancakes, waffles or toasts. Great on top of cottage cheese or fruit salads. With some yogurt or milk, makes great smoothie. Can be used in layered cakes for filling. Frozen, make great fruit pops. With garlic, ginger and some herbs additions make great fish sauce.
1 large ripe mango, skinned and cut
2 cups papaya, chopped – about half of medium fruit
1/4 cup sugar
2 tbsp. lemon juice
1 tbsp. pectin, optional
Mash mango and papaya in puree with potato masher or fork. Mix with sugar, lemon juice and pectin and cook about 10 minutes. Let cool a little. Blend in blender until smooth.
