Watermelon, Tomato and Red Onion Stack Salad

One more version for watermelon-tomato combination. Would be great with different color tomatoes, like heirloom tomato. Inspired by this picture.

Watermelon, Tomato and Red Onion Stack with Feta

Yield: 2 servings

1 large tomato
4  round watermelon slices, about 1/2 in. thin
2 red onion slices
2 tbsp. feta (I used fat-free)
splash of balsamic vinegar
basil leaves for garnish

Arrange the tomatoes and watermelon slices on each plate, seasoning with the sea salt, with 2 tomatoes and 2 watermelon slices per plate, alternating the slices. Put red onion on top. Spoon feta over the onion. Splash balsamic vinegar around the plate. Garnish with basil.

1 serving is about 115 calories
