Sweet Cherry Soup

Great light dessert with last cherries of the season. Sour cherries – the better choice, but sweet works too. Serve it warm or cold with or without additions – scoop on top whipped cream or ice-cream, or mix it, cooled, with sour cream, or like ours, top with crumbled almond cookie (amarettini). For whole meal, add some boiled pasta, Vareniki s Tvorogom  or Lenivie Vareniki.

Sweet Cherry Soup

Yield: 2 servings

1 cup pitted cherries
1 cup water, divided
2 tbsp. sugar, for taste
juice from small lemon, for taste – don’t need, if using sour cherries
optional, pinch of cinnamon
1-2 tbsp. cornstarch or potato starch (depends on thickness of soup)

Place cherries, half of water, sugar, cinnamon, if using, and lemon juice into pot, bring to boil and simmer in slow heat about 5 minutes. Mix 1/2 cup reminded water and starch (in Russia we prefer potato starch). Taste cherry compote for sour and sugar.

Pour starch mix (thoroughly mixed)  into boiling cherry compote and let thick, do not boil. Remove from heat and let cool, covered with kitchen towel. For cold version – put it, covered, in fridge for couple hours.
