Broccoli Stalk Coleslaw

Hi, I’m Olga Galanter and I love broccoli. Yes, I’m sure. I love it fresh, love it steamed. Maybe I was lucky to have no broccoli in my childhood, but today I really enjoy it. And there is a way to use broccoli stalk – bright and healthy coleslaw with carrot and red cabbage.

Yield: 1 serving

medium broccoli stalk
1/2 medium carrot
1/4 cup red cabbage, shredded

1 tsp. grain mustard
pinch of salt
splash of rice vinegar

Cut off tough outer layer from broccoli stalk (with vegetable peeler) . Grate stalk and carrot,  I used my Börner Thin Julienne Vegetable Slicer.  Mix with mustard, salt and vinegar or your favorite coleslaw dressing.
