Watermelon Gazpacho

Great cold soup for hot summer, very refreshing. Recipe courtesy Tyler Florence.

Watermelon Gazpacho

Yield: 4 servings

2 medium tomato, peeled
1/3-1/2 jalapeno pepper
3 cups cubed fresh watermelon
1/4 cup minced red onion
1 medium cucumber, seeded and minced 
tsp. balsamic vinegar
1 tsp. olive oil
salt and pepper

In a blender, puree watermelon, tomatoes, jalapeno, onion and cucumber until smooth. Add vinegar, salt and pepper to taste. Serve chilled, with croutons or crumbled feta, drizzle with oil.

1 serving is about 55 calories
