This is a very old Russian recipe, easy cold appetizer/soup for hot days. Made with kvass or milk and whole wheat or rye bread (crust is the best) with some additions (herbs or vegetables). Food of poor people, now almost forgotten. My version is with cucumbers and herbs and homemade bread kvass.
Yield: 2 serving
4 slice whole wheat or rye bread, home made or artesian is better
1 garlic clove, minced
1 tsp. vegetable oil, sunflower is better
2 cup store-bought or homemade bread kvass
2 medium Persian cucumber, chopped
3-5 green onions, chopped
3-4 dill sprigs, minced
2-3 parsley sprigs, minced
Preheat oven in 350F. Slice bread in small cubes, mix with garlic and oil, place into baking pan and bake about 10 minutes until crunchy and golden. Let cool. It’s absolutely great by itself, but try to leave some for soup.
Finely chop herbs, mix with some salt and squeeze with spoon, add chopped cucumber. Add very cold kvass and mix well, taste for salt. Serve with croutons on top and eat immediately.
Prepared horseradish or hot (Russian) mustard are great addition too.
