Egg Topped Individual BBQ Shepherd’s Pies

I used leftover pulled pork and mushed potato for this casserole. Very tasty and fun looking meal. Idea came from cooking magazine, but I don’t remember the name.

Egg Topped Individual BBQ Shepherd’s Pies

Yield: 2 servings

1/2 cup pulled pork with BBQ sauce
1/2 cup mashed potato
1 small zucchini, chopped
1/4 roasted red pepper, chopped
1/2 cup canned black beans, rinsed
2 large eggs

Sauté chopped zucchini 2-3 minutes in sprayed skillet, mix with pork in sauce, black beans and chopped pepper. Divide in two equal parts. Place meat mixture into ramekins, spread 1/4 cup mashed potato on top and put into preheated (400F) oven for about 5 minutes. Pour egg on top of each serving, try to save whole yolk, place into oven and bake until egg set, but yolk still running, about 5-7 minutes. Serve with chopped scallions.

1 serving is about 360 calories
