Sorrel, Apple and Mint Kissel

One more Russian dessert with potato starch. I grow sorrel in my backyard, it’s spinach-like leaves with sour taste. Apple adds structure and mint adds a little fresh kick. Recipe adapted from Russian blog.


Yield: 2 servings

1 cup sorrel, chopped
2 tbsp. sugar
1/2 tart apple (Gala or Granny Smith), skinned and chopped
2 mint sprigs
2 tbsp. potato starch
2 1/2 cups water
1 tbsp. lemon juice (optional)

Bring to boil 2 cups of water, add sugar, mint and apple and simmer until apple soft. Discard mint, add sorrel, bring to boil. Mix well 1/2 cup cold water and starch, pour into the boiling liquid in a thin stream and mix, until kissel thickened. Remove from heat and let cool, serve cool or cold.


1 serving is about 100 calories.
