Sweet-n-Sour Cabbage Salad with Prunes

Prunes, beets and carrots add great flavor for plain cabbage salad. It’s sweet, sour and hot. Recipe adapted from Russian site.

Sweet-n-Sour Cabbage Salad with Prunes

4 cups white cabbage, thin sliced
1 medium beet root, shredded (raw or cooked)
5-7 prunes, halved
1/2 sour apple
1/2 cup water
2 tbsp. apple vinegar
1 tbsp. honey
hot pepper flakes or sliced jalapeno
salt

Bring to boil water and prunes, let stay, covered, about 5 minutes, add honey and vinegar, set aside.

Mix together cabbage, carrot and apple, add pinch of salt and squeeze with hand.

Add prunes with all liquid, hot pepper to taste, put into jars and let stay, covered, in fridge, overnight.

Whole salad is about 350 calories
