Quinoa Salad with Feta, Broccoli and Tomatoes

I bought pack of cooked organic quinoa. Yeah, it’s our fast food now. I made tabbouleh salad, and found more great ideas. Adapted from great list of 5-Ingredient Recipes. Broccoli, tomatoes and feta works great and looks awesome on a plate.

Quinoa Salad with Feta, Broccoli and Tomatoes

Yield: 2 servings

about 3/4 cup cooked quinoa
20 cherry tomatoes
1 cup broccoli florets
2 oz. fat-free feta cheese
2-3 tbsp. scallions, chopped (I used some ramson leaves too, it adds garlic taste)
1-2 tbsp. lemon juice
chili flakes

Cook broccoli in boiled water  about 5 minutes or microwave it in a special bag about 2 minutes. Rinse in cold water to stop cooking and save green color. Cut tomatoes in halves. Chop scallions.

In large bowl combine tomatoes, broccoli, chopped scallion and quinoa, sprinkle with feta and lemon juice.

1 serving is about 175 calories
