Buttermilk (or Kefir) Orange Pull Apart Bread

Funny looking but very tasty bread. I’m not sure where I found the idea for this bread, but it’s wonderful. I made mine with plain kefir dough and orange zest filling.

Yield: 10 slices

1 cup kefir or buttermilk
1 large egg
2 1/4 cups all-purpose flour
1 tbsp. sugar
1 tsp. salt
1 tsp. dry yeast

zest from one orange
2 tbsp. sugar

1/2 tbsp. butter

Gently heat Kefir or buttermilk until warm, do not overheat, or it will curdle. Add sugar and salt. Pour the mixture into a mixer bowl, add flour and yeast and knead the dough 10-12 minutes until smooth and elastic. Let rise in double, covered, about 1 hour.

For orange filling, mix well sugar and orange zest.

Spray work surface and roll the dough into rectangle. Use pastry brush to spread melted butter over the dough. Sprinkle orange sugar over dough and cut in four strips. Place stripes inĀ  stack, cut it in four more parts. Carefully transfer these strips of dough into the loaf pan, cut edges up, side by side. Let rise about 1 hour.

Preheat oven in 350F. BakeĀ  loaf until the top is golden brown, about 30 minutes. Transfer to a wire rack and let cool in the pan for 10 minutes.

1 slice is about 126 calories
