Honey Crepes with Mango for One

Sometimes I make mini crepes for breakfast just for myself. I add some filling in them – gravlax and cream cheese, farmer cheese with pinch of sugar, or fresh or canned fruits. Mango and honey works great together.

Honey Crepes with Mango for One

Yield: 6-7 crepes for 1 serving

1 small standard cup of liquid egg replacement (I used Better’n’Egg brand), equivalent 2 eggs
1/4 cup milk
1/4 cup all-purpose flour
1 tsp. honey + 1 tsp. honey for serving
pinch of salt
1-2 ripe mango, skinned and sliced

Whisk well together egg replacement, honey, milk and pinch of salt, add four and mix well.

Pour about 1/3 cup batter into the center of preheated, sprayed with cooking spray, crepe pan (I used small cat iron pan, about 6.5 inches)  and swirl to spread evenly, cook on both sides, until lightly brown.

Place some sliced mango in the middle of crepe, roll. Serve warm with honey drizzle.

Crepes is about 220 calories
Mango is about 80 calories
