April Fool Cake – Russian Beef Liver Cake

It’s not really April joke, it’s a real Russian appetizer, but it also looks like cake and can fool somebody too. It’s another way to use beef liver, needs some works but it’s worth it.

In Russia we used mayonnaise with garlic and cooked carrot and onion for filling, but now I used (jalapeno) cream cheese instead and we loved the result.

Some add more eggs, milk and flour, but I prefer plain liver taste.  Liver pancakes are good by themselves. Also plain crepes can be added between layers.

I add mashed potato in ice-cream cones as a side for complete April’s Fool dinner meal.

Russian Beef Liver Cake

Yield 4 servings

two large slices – about 15-17 oz. beef liver (weight after sieved – 10 oz. ) , chicken liver can be used as well
1 large egg
salt
1/2 cup jalapeno or plain or garlic and herbs or chives cream cheese
1 cooked carrot, grated (optional)
1/2 onion, sliced, cooked until soft (optional)
2-3 tbsp. chopped parsley leaves (optional)

Russian Beef Liver Cake

Cut beef liver into small pieces and blend in blender until smooth, run through a sieve, (it’s optional, but will allow to avoid lumps), mix with egg and pinch of salt. Pour about 1/2 cup liver batter into the center of preheated, sprayed with cooking spray, crepe pan (I used small pan, about 6.5 inches)  and swirl to spread evenly, cook on both sides, until lightly brown.

Place hot pancake onto plate, add about 1 1/2 tbsp. cream cheese on top, pour next portion of batter in the pan, meanwhile cream cheese became soft and and it will be easy to spread it. Put next cooked pancake on top of one with filing and put cream cheese on top, repeat with all batter and cream cheese. Add cooked carrot or onion, or parsley between layers if wanted.

I add some carrots and cover my “cake” with crushed Finn Crisps. And top with red pepper “rose”. I’m not very good with cake decoration.

1 serving is about 200 calories
