Beer Batter Crepes – Blinchiki na Pive

Leftover beer makes awesome thin crepes, great for any savory (or even sweet) fillings.  There is no beer taste in crepes, maybe just a little “sourdough” smell.

Beer Batter Crepes – Blinchiki na Pive

Yield: 10 crepes

2 eggs
1 cup low-fat milk
pinch of salt
1 tbsp. sugar
1 cup of flour
1 bottle (12 oz.) light beer

Whisk all of the ingredients, except beer. Heat a small non-stick pan (I have cast-iron pan), spray with cooking spray. Mix batter with beer. Pour 1/2 cup of batter (or enough to cover the bottom of pan) into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip with spatula. Cook for another 15 seconds and remove to the plate. Continue until all batter is gone. There is no any oil or butter in batter, so spray pan time to time to prevent sticking.
