Fast Marinated Tomatoes with Sweet Onions

Fast way to enjoy sweet-n-sour tomatoes, especially if it’s not very tasty in fresh. It’s ready in one day. In Russia we add not too much spice. Just peppercorns and bay leaves, but we use fresh dill stalks and umbels, garlic and hot peppers.  But, for sure, pickle spice mix can be used.  Oh, and onion here is tasty too. Fast Marinated Tomatoes with Sweet Onions

2-3 lb. red tomatoes
4 cups water
2 tbsp. salt
5 tbsp. sugar
1/2 cup white vinegar
1/2 large sweet onion, sliced
1-2 buy leaves
5-10 peppercorns
3-4 garlic cloves

Poke holes with toothpick in tomato skins to prevent bursting (it didn’t help me). Bring to boil water, add sugar, salt, vinegar, garlic, bay leaf and pepper. Let to boil, add onion and tomatoes, low heat in minimum and cook, uncovered, about 7-10 minutes. Remove from heat, let cool to room temperature, put in fridge for about 12 hours.

1 marinated tomato, usually, is about 22-25 calories
