Stuffed Crepe Triangles – Benderiki

Maslenitsa is gone, but there was a lot of great recipes of pancakes in blogs. This is traditional pancakes for Western Ukraine. Benderiki – are triangular shaped crepes that are filled with various fillings (cheese, cottage cheese, potato, mushrooms or raw meat), then dipped in egg and fried until golden brown. Named after Moldavian town – Bender(i) (from the Persian – “the harbor”). I made mine benderiki with raw turkey and onion. Adapted from Russian Blog Home Cooking.

Stuffed Crepe Triangles - Benderiki

Yield: 4 servings (4 crepe each)

2 large eggs
1 cup all-purpose flour
1 1/2 cup warm water (or more, to make thick crepe batter)
pinch of salt
pinch of sugar
1-2 tbsp. olive oil

10 oz. ground turkey or chicken
1/2 medium onion, diced
salt and pepper

1 egg
pinch of salt
1-2 tbsp. milk

Separate whites and yolks. Mix yolks with salt and sugar, add water,  stir in the flour and whisk until smooth. Add olive oil, mix well and let batter rest about 1 hour at room temperature.

Whip egg whites until foam and carefully add to batter. Unfortunately, I casually read the recipe and mix all at once. My pancakes were solid – without air bubbles. But it is good for stuffing anyway.

Spray pan, heated in medium-high. Pour 1/2 cup of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the plate. Make 8 crepes.

For filling: cook diced onion, in sprayed with cooking spray small pan, until lightly gold, mix together with ground turkey, add salt and pepper to taste and 1-2 tbsp. water to make spreadable mixture.

Cut crepes in half. Place crepe half, dark side up, in flat surface. With wild knife, spread 1/16 of turkey mixture. Visually divide the crepe into three equal parts, bend one side to the center, then cover with second side to make flat triangle. Make 16.

Preheat skillet in medium-low heat, spray it with cooking spray (or add oil in it). Mix egg, salt and milk in small bowl. Dip each crepe triangle in egg-milk mixture and put into skillet, cook in both sides until golden brown.

Can be baking in preheated (400F) oven about 15 minutes, but it can make benderiki dry.
