Cocoa Mochi in Microwave

Oh, I love mochi. Mochi candy on ice-cream, daifuku… Sometimes I bought Sweet Rice Flour from Koda Farms and made my own mochi in microwave. Recipe adapted from box of rice flour.

Cocoa Mochi in Microwave

3 tbsp. unsweetened cocoa powder
1/2 cups sugar
1  1/2 cups Sweet Rice Flour
2 cups water
1 tbsp. starch
1 tbsp. powder sugar

Mix rice flour, cocoa, sugar and water in a large microwavable bowl until smooth. Cover and microwave 3 minutes on high. Remove from oven and mix thoroughly. Cook an additional 6 minutes on high.  Let mochi cool until firm.

Mix starch and sugar powder, dust top mochi with it and invert contents onto a dusted cutting board.
Cut mochi into small pieces and dust all surfaces in sugar-starch powder.

I cut whole thing into 12 pieces, each piece is about 110 calories
