Chicken Heart Kabobs

Great idea I found on a Russian Cooking Portal, the same, where I found buckwheat cookies. Marinated in soy sauce and grilled or fried chicken hearts on sticks. It’s a great meat, I already used it in Stir Fried Chicken Hearts, Russian chicken giblets and dumplings soup and Meurav Yerushalmi,  now – this kebab, next time I’ll try to marinate it in adobe and chipotle chili.

Yield: 8 skewers

about 1.6 lb. (80 pieces) chicken hearts
3 tbsp. soy sauce + 1 tbsp. sherry or red wine vinegar
1/2 tsp. black pepper

Wash and rinse chicken hearts, marinated about 4 hours in soy sauce and sherry, dry. Skewer 10 hearts on bamboo stick and grill or fry in the sprayed skilled about 20 minutes for both sides. Great with hoisin sauce and cucumber salad.

1 skewer is about 100 calories
