Cannoli Stuffed French Toasts with Cherry Compote

Great start for busy day – ricotta and chocolate chip stuffed French toasts with cherry compote on top.  What’s not to love?

Cannoli Stuffed French Toasts with Cherry Compote

Yield: 2 servings

8 bread slices (I used Italian Bread 50 calories for slice)
1/2 cup ricotta (I used fat free)
2 tbsp. mini chocolate chips
1 egg white
1/4 cup of 2% milk
1/2 cup of frozen cherry

Combine ricotta and chocolate chips, divide into 4 equal part. Mix egg white and milk. Spread the filling on a slice of bread and add another slice on top. Dip the sandwich in an egg white and milk mixture. Cook in sprayed with cooking spray hot griddle, turning once.

Put frozen cherry in microwave-safe bowl and cook 2 minutes, serve hot on top of toasts.

1 serving is about 375 calories
