Marinated Red Cabbage and Apples Salad

Red cabbage is great for salads and absolutely great with apples. Try this salad with roasted pork chops or with grilled fish tacos. Adapted from Russian Blog Povarisha.

Marinated Red Cabbage and Apples Salad

1/2 medium head (3-4 cups) red cabbage
1 tart apple (Granny Smith or Gala)
1-2 tsp. honey
4 tbsp. apple cider vinegar
1 tbsp. olive oil (sometimes I don’t use it, recipes call 1/2 cup)
salt to taste
chopped walnuts (optional)
1-2 tbsp. raisins (optional)

Thinly slice cabbage, add pinch or two of salt and squeeze with hands – careful, cabbage juice can color hands.

Peel and grate apples. Mix with cabbage. Add raisins if using. Combine oil, honey and vinegar, pour onto cabbage and mix well. Let stay covered in fridge overnight. Serve with chopped walnuts on top.

Yield: 4 servings
1 serving (without oil, raisins and nuts) is about 55 calories
