President’s Day Meets Meatless Monday: Ronald Reagan’s Rancho California Rice

Perhaps Ronald Reagan – the first U.S. president, about whom I, the Soviet girl, learned. Then we began to realize that the U.S. is not the “evil empire”…

So, this is great creamy casserole with green chili twist. Adapted from Cooking With Libby Blog. Serve it with spiced coleslaw in California style. Add Jelly Beans for dessert.

Ronald Reagan's Rancho California Rice

Yield: 4 servings

1/3 cup onion, chopped
2 cups rice, cooked
1 cup cottage cheese
1/4 cup sour cream
1 bay leaf
Salt and pepper
16 oz. green chili (canned)
1/2 cup grated cheddar cheese (I used fat-free)

Cook rice, follow directions on the package, but with bay leaf, discard when rice done.

Preheat oven in 375F.

Sauté onions in sprayed with cooking spray pan until soft. Add rice, sour cream, cottage cheese, salt & pepper. Mix well.

In greased casserole dish, put a layer of rice mixture, a layer of chilies, and 1/4 cup cheddar. Bake for 20 minutes. Top with remaining cheese, and bake 5 minutes more.

1 serving is about 215 calories
