Overnight Yeast Waffles

Plain yeast waffles, great with savory or sweet additions. Right start for snowy day after blizzard.

For more crunchy add more butter. Adapted from Better Home and Garden.

Overnight Yeast Waffles

Yield: 4 waffles

2 cups all-purpose flour
1 tbsp. sugar
1 tsp. active dry yeast
1/2 tsp. salt
2 cups low-fat milk
2 eggs (I used Better-n-eggs)
1 tbsp. butter, melted

In a large bowl beat together flour, sugar, yeast, salt, milk, eggs, and butter. Beat with an electric mixer until thoroughly combined. Cover batter loosely and chill overnight or up to 24 hours.

Pour about one cup batter onto preheated waffle maker. Cook until waffle is golden and cooked through.

1 waffle is about 285 calories
