Russian Semolina Cake – Mannik

There are lots of recipes for this cake with Russian semolina/farina (wheat cereal) – manka.

There are plenty options in technology: some pours liquid in semolina and let it swelled overnight, some adds flour, overs prefer semolina only, some whips egg whites separately.

There are plenty in additions: some pours sugar syrup or milk on cake, some sandwich it with jam or butter frosting, some add in batter fruits and berries, farmer cheese or chocolate. So many variations!

This is easy (5 ingredients only!) and low-fat variation. Just mix it and bake.

Russian Semolina Cake - Mannik

Yield: 6 servings

1 cup Kefir or buttermilk
1 egg
1/2 cup sugar
1 cup semolina flour
1/2 tsp. baking soda (not powder!)

Russian Semolina Cake - Mannik

Preheat oven in 350F.

Mix together egg, kefir or buttermilk, sugar, semolina flour and soda. Pour into baking pan (cake pan 9 inches) and bake 30 minutes. Cut in 6 slices and serve hot or cool.

Great with chocolate glaze or just it.
