Juniper Berries Gravlax

And one more cured salmon recipe. This one adapted from NY Times. Juniper adds smoky taste and great foresty fragrant.

2 tbsp. kosher salt
2 tbsp. granulated sugar
1 tsp. white peppercorns
1 tbsp. juniper berries
1 lb. salmon fillet, skin on

Heat peppercorns and juniper berries in small skillet over medium-high heat until spices are fragrant and seeds jump slightly, shaking skillet frequently, about minute. Crush spices in mortar with pestle.

In small bowl, combine salt, sugar, peppercorns and juniper. Using your hands, rub 1 cup of the mixture all over the salmon. Transfer to a glass baking dish and cover with the remaining mixture. Cover with parchment paper and refrigerate for 1-2 days.

Discard liquids. Transfer the salmon to a cutting board and slice thinly on the diagonal.
