Banana Cinnamon Swirl Bread

Great breakfast bread, love it toasted with peanut butter or chocolate paste or just it is. Inspired by About. com bread recipe.


Yield 12 slices

1/2 cup milk, room temperature
1 tsp. dry yeast
1 ripe banana, mashed
1 large egg
1 tbsp. butter, melted
1 tbsp. sugar
1 tsp. salt
2 cups bread flour
1 tbsp. ground cinnamon + 2 tbsp. brown sugar

In mixer bowl, mix milk and yeast. Add banana, egg, butter, sugar and salt. Knead the soft dough until smooth and elastic.

Let rise in double, covered with kitchen towel, in warm place about 1 hour. Mix brown sugar and cinnamon.

Preheat oven in 350F.

Gently roll dough into oval shape in sprayed with cooking spray or flour surface, spread sugar and cinnamon mix on top, fold into a roll.

Arrange roll in a greased loaf pan, cover with kitchen towel and let rise about 45 minutes.

Bake about 30 minutes. Remove from the oven and pan and let it cool completely.

1 slice is about 103 calories
