Chocolate Candy with Chick Peas, Nut Butter and Honey Filling

Candy balls become a little more healthy. Adapted from Povarenok.Ru (Russian).


Yield: 8-10 candies

1/2 cup cooked chickpeas
1 tbsp. honey
1 tbsp. peanut butter or tahini
pinch of salt
1/4 tsp. vanilla extract
4 tbsp. semi-sweet chocolate chips
1/2 tsp. oil

Combine chickpeas, honey, nut butter, salt and vanilla in bowl, blend until smooth. Using two teaspoons or Norpro Stainless Steel Scoop make 8 balls. Put balls in plate, lined with parchment pepper and freeze until set, about 30-40 minutes.

Melt chocolate with oil in microwave or in double boiler, cover balls with chocolate, let cool.

1 candy (of 8) is about 82 calories
