Russian Beet Salad with Apples and Prunes

It was very popular Soviet salad, plain version was just grated beets and mayonnaise or sour cream (smetana). Some add prunes, or walnuts, or cheese, or apples, but more often – garlic. Chop it or grate, it’s great in any way.

Russian Beet Salad with Apples and Prunes

Yield: 2 serving

3 medium-small beets (about 8 oz.), cooked, peeled
1/2 tart apples (Granny Smith), peeled and cored
5-6 prunes
2-3 tbsp. dill, chopped
lemon wedge

1/2 cup sour cream
1 garlic clove, minced
salt and pepper

Slice the beets and the apples in small cubes, squeeze a lemon juice on top, add chopped prunes, mix, set aside.

In a small bowl, mix sour cream, garlic, dill, pinch of salt and pepper.

Mix dressing with beets, apples and prunes. Serve cooled.

1 serving is about 132 calories
