Pear Milk Jam or Pear Caramel Sauce

Great replica to dulce-de-leche (milk caramel), now with pears. Great for ice-cream topping, or with waffles and pancakes, or for pie and cake filling.

Pear Milk Jam or Pear Caramel Sauce

Yield: 17 oz.

4 medium pears
1 1/2 cups sugar
2 cups milk
1 tbsp. baking soda (not baking powder!)

Peel and core pears, chop in small cubes and mix with soda, let stay at least half an hour. Put in a colander and rinse well with running water. Soda does not give milk to curl, as well as soften the pears.

Mix milk and pears and cook 30 minutes or until pears soften. Add sugar and cook about 3 hours (or more, depend of pears hardness), until creamy. Blend, if prefer smooth structure.
