Carrot, Banana and Date Drop Cookies

Small pieces of sweet and healthy carrot cakes. No sugar at all, and all sweets from banana and dates. Any kind of nuts (walnut or pecan is greatest) can be added, and, sure, cream cheese frosting too. But count the calories…

Carrot, Banana and Date Drop Cookies

Yield 23 cookies

1 medium carrot, chopped
2 oz. dried dates (about 8 dates)
1 medium ripe banana
2 tbsp. coconut spread or oil
1 large egg
1/2 tsp. vanilla extract
1/2 cup all-purpose flour
1/2 tsp. baking powder
pinch of salt
1/2 – 1 tsp. cinnamon, ginger or pumpkin pie spice mix (optional)

Preheat oven in 350F.

In blender bowl combine carrot, dates, banana, egg, oil or spread and vanilla extract and process until almost smooth. Carrot and dates would be still in tiny pieces, but it’s ok.

Add flour, mixed with salt, baking powder and spices, mix. Use two teaspoon or Norpro Stainless Steel Scoop and drop cookies on sprayed with cooking spray pan Bake 12 minutes.

1 cookie is about 30 calories
