One-Eyed Zombies (Zucchini Fritters and Fried Eggs)

Our Halloween was not very fun or scary because of Sandy. Some food and lot of candies.

Yield: 2 servings

1 medium zucchini
1 large egg
1 tbsp. flour
salt and pepper

2 eggs for “eyes”
Cucumber for “lashes”
Dried tomatoes for “red eyes”

Grate zucchini on the large holes of a box grater, I used my Börner Thin Julienne Vegetable Slicer. Mix with pinch of salt, let stay and squeeze the juice out. Add egg and flour, pepper and more salt if needed. Heat the large heavy skillet on medium-high heat, spray it with cooking spray. Drop the zucchini mixture onto the skillet and flatter with the back of spoon. Cook the fritters until golden brown, about 3 to 4 minutes.

Fry egg with whole yolk in your choice, serve with fritters.

1 serving : 2 fritters + fried egg = 120 calories
