Black Rice with Sweet Potatoes

The recipe from the package of black rice give me idea for side dish. Easy and bright dish. Very interesting rice, cooked – a little violet, sticky and tasty.

Yield: 2 servings

1/2 cup dry black rice
1 1/2 cups water
1/3 tsp. salt
1 medium sweet potato
3-4 scallion sprigs, sliced
1 garlic clove, minced

Bake sweet potato in oven (about 1 hour) or microwave (7-8 minutes). Peel and cut into cubes.

Bring rice, water, and salt to a boil in a pot. Reduce heat to low and cook rice, covered, until tender and most of water is absorbed, about 30 minutes. Remove from heat and let stand, covered 10 minutes.

Heat a large skillet over medium-high heat, spray it with cooking spray and sauté scallions, garlic, and sweet potato until slightly browned, add rice and toss gently to combine.

1 serving is about 215 calories
