Dutch Coffee Bacon Pancakes – Polderkoek or Pannenkoek

This is farm workers food, hearty and simple, all in one plate. Part of milk is replaced by a strong black coffee. In original recipe 3 bacon slices used for one pancake, and a bacon grease too, but I made a lighter version. Coffee taste is not very strong, next time I add more coffee and use crumbled bacon. Yield: 10 pancakes

5 bacon slices, halved
1 cup strong coffee
1 cup milk
1 large egg
1 cup all-purpose flour (+ 1-2 tbsp. more if need, batter is thin, like for crepe)

Cook bacon in microwave or skillet, discard grease and set aside.

Put sifted flour into bowl, add egg and mix to combine, add coffee and milk and stir until smooth.

Put half slice of bacon into pancake skillet, pour 1/3 cup of batter on it and cook until brow in both sides, repeat with remaining bacon and batter. Serve hot with syrup (original – suikerstroop)

1 pancake is about 80 calories
