Cottage Cheese Bread with Parsley Swirl

I still in love with bread swirl idea. I used great bread recipe from Betty Crocker site and added parsley-garlic paste for swirl. Great taste and awesome smell.

Yield 12 slices

2 1/2 cups all-purpose flour
1 tbsp. sugar
1 tbsp. dried minced onion
1 tsp. salt
1/2 tsp. dry yeast
1 cup very warm water
1/2 cup small-curd cottage cheese (I used farmer cheese)
1/3 cup parsley, finely chopped
1 garlic clove, minced

Mix water and cottage cheese, if curds are too big, use blender. Add sugar, salt and onion. Add flour and yeast and knead the dough until smooth and elastic.

Let rise in double, covered, in sprayed bowl, about 1 hour. Mix chopped parsley and garlic to paste.

Roll dough into oval shape, set aside. Add parsley-garlic paste, smudge on 2/3 part of dough, fold into a roll. Tuck the edges.

Arrange roll in a greased loaf pan, cover with kitchen towel and let rise about 45 minutes. Sprinkle some dried onion on top.

Bake in preheated (350F) oven about 30 minutes. Remove from the oven and pan and let it cool completely.

1 slice is about 100 calories
